Abstract:
Functional oligosaccharides are an important class of prebiotics with many important physiological functions, and have received widespread attention from researchers and consumers in recent years. The preparation methods of functional oligosaccharides mainly include chemical, enzymatic, and physical methods, among which enzymatic preparation is a green, efficient, and most promising method for development and application. This article systematically introduces the research progress in the enzymatic preparation of five typical functional oligosaccharides, including oligosaccharides such as xylooligosaccharides, chitooligosaccharides, agarose oligosaccharides, galactooligosaccharides, and mannan oligosaccharides, based on the differences in enzymatic preparation processes of different types of functional oligosaccharides; It also summarized and introduced the raw material sources, structural differences, and health functional activities of different types of functional oligosaccharides; Finally, the development trend of basic research in the field of functional oligosaccharides was predicted and forecasted, in order to provide reference for the research and practical production application of functional oligosaccharides in China.
