Abstract:
Drying is an important technology for processing and storing agricultural products. The use of microwaves for drying agricultural products has the advantages of fast drying rate and minimal loss of nutrients. However, microwave drying has poor uniformity and is prone to problems such as material edge or sharp corner coking due to overheating. Combining microwave with other drying techniques can effectively solve this problem. This article briefly describes the principle of microwave drying, focusing on the characteristics and research progress of combined drying technologies such as microwave and hot air, fluidized bed, heat pump, vacuum and vacuum freezing at home and abroad. It summarizes the current problems and proposes development trends, providing reference for further research on microwave combined drying technology in the field of agricultural products.
