Abstract:
With momordica grosvenorii, broom and loquat flower as the main raw materials, citric acid and
erythritol as the auxiliary materials, through single factor test and orthogonal test, with sensory evaluation as the
benchmark, the optimal formula of the compound drink of momordica grosvenorii, broom and loquat flower
were studied. The optimal process parameters were determined based on the total volume of the mixed liquid of
the compound beverage (200ml). The experimental results were as follows: the addition ratio of momordica
grosvenorii glycoside extract was 5%, the flavonoid extract of broom leaf flower was 1:2, the addition ratio of
erythritol was 0.4%, and the addition of citric acid was 0.01%. The compound drink produced in this process was
transparent and colorless, sweet and sour, and accompanied by the unique fragrance of broom flower, loquat
flower and other linear leaves.
